What You’ll Need:

  • 20 large leaves of tuscan kale
  • 1/4 cup olive oil
  • 1/2 clove garlic
  • 1/2 a lemon, juiced
  • 1/4 cup grated pecorino romano cheese
  • 1 slice good quality sourdough bread
  • 1 pinch red chile flakes

2. Green Bean Casserole

What You’ll Need:

  • 2 9-ounce bags frozen green beans (or one bag of green beans and one bag of a second vegetable)
  • 1 pint button mushrooms, sliced
  • 1 onion (half thinly sliced, half chopped)
  • 1 can healthier cream of mushroom soup
  • ¾ cup 1% or skim milk
  • Salt and Pepper
  • Cooking spray
  • 2 tbs. flour

3. Kale and Butternut Squash Stuffing

What You’ll Need:

  • 5 tablespoons olive oil (divided)
  • 1 loaf stale whole wheat bread, cut into ½ inch cubes
  • 1 lb. Italian turkey sausage, casings removed (omit for vegetarian)
  • 1 small butternut squash, cut into ½ inch cubes
  • 3 small leeks, halved and thinly sliced
  • 1 teaspoon each salt and pepper
  • 1 bunch kale
  • 1 egg
  • 2 cups chicken broth (substitute vegetable broth for vegetarian)

What You’ll Need:

  • 10 large carrots
  • 3 tablespoon olive oil
  • 2 tablespoon honey
  • 2 oranges, cut into 8 pieces each
  • 1/4 cup slivered almonds

What You’ll Need:

  • 2 turkey breasts, boneless, skinless (about 1 pound each)*
  • 1 cup chopped flat-leaf parsley
  • 3 cloves garlic, finely chopped

  • 2 1/2 c. cranberries, washed and picked over
  • 3/4 c. plus 1/3 c. sugar, divided
  • 3/4 c. flour

What You’ll Need

  • 1 stick unsalted butter at room temperature (or 1/2 cup unsweetened applesauce)
  • 1 1/2 cup sugar
  • 1 cup canned pumpkin
  • 1 large egg
  • 1 teaspoon vanilla
  • 2 cups whole-wheat flour (or a half white flour, half whole-wheat mix)
  • 1/2 cup flaxseed meal (optional — if you omit, add an extra 1/2 cup of flour!)
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup  dark chocolate chips
  • 1/4 teaspoon salt (optional)
