Nothing screams it is time for autumn better than sweet potato pie. We bring you 6 delicious sweet potato recipes to incorporate in your festivities this year. Enjoy!

Sweet Potato Casserole

Ingredients

  • 4 cups sweet potato
  • ½ cup white sugar
  • 2 eggs, beaten
  • ½ teaspoon salt
  • 4 tablespoon butter
  • ½ cup milk
  • ½ teaspoon vanilla extract
  • ½ cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tablespoons butter, softened
  • ½ cup chopped pecans

Directions

  • Preheat oven to 325 degree.
  • Put sweet potatoes in a medium saucepan with water to cover.
  • Cook over medium high heat until tender; drain and mash.
  • In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk, and vanilla extract.
  • Mix until smooth, then transfer to a 9×13 inch baking dish.
  • In a medium bowl, mix the brown sugar and the flour.
  • Cut in the butter until the mixture is course.
  • Stir in the pecans.
  • Sprinkle the mixture over the sweet potato mixture.
  • Make in a preheated oven for 30 minutes or until the topping is lightly brown.

Sweet Potato Pecan Pie

 Ingredients

  • 1 (9in) unbaked pie crust
  • 2 cups cooked and mashed sweet potatoes
  • 2 eggs
  • ¾ cup white sugar
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 2/3 cups light cream
  • 3 tablespoons butter, softened
  • 2/3 cup packed brown sugar
  • 2/3 cup chopped pecans

 Directions

  • Bake sweet potatoes until tender, peel, and mash. Make sure all lumps are removed.
  • Lightly beat eggs.
  • Blend together eggs and sweet potatoes.
  • Stir in sugar, salt, cinnamon, and cloves.
  • Blend in cream.
  • Pour into pie shell.
  • Bake in a preheated oven at 400 degrees for 45-55 minutes. Cool on rack.

Sweet Potato Bread

 Ingredients

  • 1 ½ cups white sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 1 3/4 sifted all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1/3 cup water
  • 1 cup cooked and mashed sweet potato
  • ½ cup chopped pecans

 Directions

  • Combine sugar and oil; beat well.
  • Add eggs and beat.
  • Combine flour, baking soda, salt, cinnamon and nutmeg.
  • Stir flour mixture into egg mixture alternately with water.
  • Stir in sweet potatoes and chopped nuts.
  • Pour batter into greased 9×5 inch loaf pan.
  • Bake at 350 degrees for one hour.

Southern Candied Sweet Potatoes

 Ingredients

  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 pinch salt
  • ½ cup butter
  • 6 sweet potatoes, peeled and sliced
  • 1 tablespoon vanilla extract

Directions

  • In a small bowl, mix the sugar, cinnamon, nutmeg, and salt together
  • Melt butter in a large skillet over medium heat and ass sweet potatoes
  • Sprinkle sugar mixture over the sweet potatoes and stir.
  • Cover skillet and reduce heat to low.
  • Cook, stirring occasionally for 1 hour, or until it is dark and the potatoes are candied.
  • They should be tender, but a little hard around the edges
  • Stir in vanilla and serve.

Sweet Potato Cheese Cake

Ingredients

  • 1 ¼ cups graham cracker crumbs
  • ¼ cup white sugar
  • ¼ cup butter, melted
  • 2 pounds sweet potatoes
  • 3 (8 oz) packages cream cheese, softened
  • 7/8 cup white sugar
  • 1/3 cup sour cream
  • ¼ cup heavy whipping cream
  • 3 eggs
  • ¾ cup packed brown sugar
  • 1/ cup butter
  • ¼ cup heavy whipping cream
  • 1 cup chopped pecans

Directions

  • Preheat oven to 350 degrees
  • Mix together graham cracker crumb, ¼ cup sugar, and ¼ cup melted butter.
  • Press mixture into the bottom of a 9 ½ in spring form pan.
  • Bake 10 minutes and set aside to cool
  • Place potatoes in a baking dish.
  • Bake until a knife inserted in center goes though easily, about 1 hour
  • Cool sweet potatoes enough to handle, peel, and puree.
  • Beat cream cheese and ¾ cup plus 2 tablespoons white sugar until smooth.
  • Mix in sour cream, ¼ cup cream, and 1 1/1 cups sweet potato puree.
  • Beat eggs in one at a time, blending well after each.
  • Pour filling into crust.
  • Bake in 350 degrees oven until a tester interested near the center comes out clean, about 1 hour.
  • Turn off the oven and let cake sit for an hour in the oven with the door open.
  • Combine brown sugar and ¼ cup butter in a heavy smaller saucepan.
  • Stir over low heat until sugar dissolves.
  • Increase heat, and bring to a boil.
  • Mix in ¼ cup cream, then nuts.
  • Pout hot topping over cheesecake.
  • Store leftover cheesecake in the refrigerator.

The Original Sweet Potato Pie

 Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • 2 eggs
  • 1 ¼ cups evaporated milk
  • 3/8 cup white sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons rum
  • 4 tablespoons melted butter
  • 1 (9 in) unbaked pie crust

Directions

  • Preheat oven to 425 degrees
  • Into food processor, put sweet potatoes, evaporated milk, sugar, salt, cinnamon, nutmeg, rum, eggs, and butter.
  • Blend until smooth.
  • Pour into pie shell.
  • Bake for 10 minutes in preheated oven.
  • Reduce heat to 300 degrees F.
  • Bake for 50 minutes more, or until the filling is firm
