Mouth Party: Kale Soup

Thanksgiving is over and hopefully you had enough left over to make all six of our non-sandwich leftover ideas. As awesome as it is stuffing our face with…stuffing and salivating over your Aunt Betty’s delicious cakes, what’s not awesome is you feeling like the turkey you just spent a week chowing on. Here’s a simple recipe you can make in my absolute favorite kitchen tool…THE CROCKPOT! Just a few ingredients, some delicious veggies, and a very thankful tummy.

Kale-Soup-Recipe-SOA Event Concepts


9 Raw kale leaves, large

1 1/2 cup of Vegetable broth

1 cup distilled water

Two whole carrots, chopped

Two large potatoes, cut into cubes

2 tablespoons onion powder

2 tablespoons garlic powder

2 tablespoons parsley flakes

Onion, minced (optional)

2 tablespoons

Sea Salt & Pepper to taste


Turn crockpot to low and add vegetable broth, water, and spices. Cut kale leaves into three pieces and add to crockpot along with chopped carrots, potatoes and onion. Cook for 6-7 hours. Enjoy!

If you would rather your meal not take all day, set crockpot to high and cook for 3-4 hours. Enjoy!
