Mouth Party: Huevos Con Salsa

It has been getting kinda crazy over here at the SOA HQ: prepping and planning upcoming events, meetings with potential partners, orienting new interns, planning for Q1 2014 and beyond! So excited to witness this growth and of course be a part of it. The thing about growth and being busy as well as productive is that finding time to cook your normal five nights a week starts to dwindle. As much as I love going out to eat and trying new dining experiences, I just can’t go without a homecooked meal, even if it is something super simple and small.

I don’t remember a time where I enjoyed eggs. As far back as I could remember, I would try eggs in a variety of ways, but just couldn’t get over the texture. Finally one day, it occurred to me to try an egg white omelette with cayenne pepper…this is LITERALLY the only way I will eat eggs in it’s most basic form. Now that I am acclimated to its delicious and even healthy taste, I decided to try something new. Enter, huevos con salsa. Granted, the name is fancy, but the directions are super easy! Even a busy entrepreneur like myself can get it done in between projects!

Huevos con Salsa

Ingredients

2 egg whites

salted butter

cayenne pepper (optional, I like the health benefits and the little kick)

chunky salsa

sharp cheddar cheese

sour cream (optional)

Directions

Heat small skillet on medium heat

Whisk egg whites and slowly add cayenne pepper to taste

Add a 1/2 tablespoon of butter to the heated skillet

Add egg whites to heated skillet and let cook on each side for about 2-3 minutes

Add a slice of sharp cheddar to the center of the omelette

Add two to three large spoonfuls of chunky salsa and fold egg white over

Cook for an additional minute and a half

Add to flour tortilla. This is where you can add the sour cream and more salsa if you wish.
