Mouth Party: Sweet Potato Soup

Last week, I professed my undying love to sweet potatoes with the sweet potato soufflé. Naturally, with a medium bowl left of sweet potato souffle, I asked myself what could I create that was not only delicious but could work in a dinner party setting! Insert the crock pot and the left over sweet potato soufflé.

I never realized how simple it was to make soup. You literally through together ingredients in a crock pot, put the heat on low for all day simmering or high for a few hours and VOILÁ! Soup! Check out this super easy, left over hack for sweet potato soup!

Sweet Potato Soup

Ingredients (Serves 4-5)

Leftover Sweet Potato Soufflé

1 can vegetable or chicken broth

1 teaspoons onion powder

1 teaspoons garlic powder

dash of salt

dash of pepper

2 teaspoons rosemary

3 tablespoons sugar


Mix all ingredients into large bowl. With a hand mixer or immersion mixer, mix ingredients until creamy. Pour mixture into crockpot. Set crockpot to low and let cook for 6-7 hours OR set crockpot to high and left cook for 3-4 hours. Serve with garlic toast or sour dough.
