Mouth Party: Sweet Potato Souffle

I have a love affair with sweet potatoes. I haven’t met a sweet potato fry that I didn’t blanket in ketchup. I make love to sweet potato pie and I lust after sweet potato cupcakes. I wouldn’t say I’m obsessed about sweet potatoes……not obsessed.

I was really craving sweet in mashed potato form, but when you have the fancy cousin of the white potato, you have to make it into a fancy dish. The sweet potato souffle is mashed sweet potatoes with a heat complex. Lol! Check out this recipe for sweet potato souffle.

Sweet Potato souffle

Ingredients (Serves 4)

Two large sweet potatoes

1 tablespoon Unsalted butter

Dash of salt

Generous sprinkle Cinnamon

Teaspoon Vanilla Extract

2 tablespoons of honey

2 tablespoons of brown sugar

1/3 cup of milk (we only drink almond milk in our house)

Handful of Pecans (optional)

Cayenne Pepper (optional


Preheat oven to 350°F

Boil sweet potatoes whole (mine were just under ripe and hard to cut, so I boiled for about 10 minutes whole then cut and boiled for another 15-20 minutes)

Once soft, drain, and mash. Add cinnamon, vanilla extract, butter, brown sugar, milk, and salt and beat with mixer for about 5 minutes to get rid or lumps. Add milk as needed to soften to desired texture.

Add to oven safe dish and top with pecans for about 10 minutes

Take out of oven sprinkle cayenne pepper, drizzle with honey and top with pecans.

Enjoy! I enjoyed this dish with sauteed spinach with garlic and pan seared chicken breast.
